Lobster Avocado Toast topped with a Perfectly Poached Egg

Makes 2 servings

Ingredients:

  • 1 ripe avocado

  • Salt and pepper, to taste

  • 4 nice pieces of lobster meat

  • 1 tablespoon of Lemon Garlic Herb Butter

  • 2 sprig of chive, finely chopped

  • 2 large eggs

  • 1 tablespoon white vinegar

  • 2 slices of bread (your choice of bread, such as sourdough or whole grain)

  • Optional garnishes: more chopped chives, red pepper flakes,

Instructions:

Prepare the Lobster Avocado Mash:

  • In a mixing bowl, mash the ripe avocado until smooth. Season the mixture with salt and pepper to taste. Set aside.

Prepare the Lobster:

  • In a small sauté pan, lightly sauté the lobster over low heat in the Lemon Garlic Herb Butter and the chopped chives.

Poach the Eggs:

  • Fill a large saucepan with water and bring it to a gentle simmer over medium heat.

  • Add the white vinegar to the simmering water. The vinegar helps the egg whites to coagulate and hold their shape.

  • Crack one egg into a small bowl or ramekin. Using a spoon, create a gentle whirlpool in the simmering water, then carefully slide the egg into the center of the whirlpool.

  • Repeat the process with the second egg.

  • Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.

  • Use a slotted spoon to carefully remove the poached eggs from the water and place them on a paper towel to drain excess water.

Toast the Bread:

  • Toast the slices of bread until they are golden brown and crispy to your liking.

Assemble the Lobster Avocado Toast:

  • Spread a generous amount of the avocado mash onto each slice of toasted bread.

  • Add a piece of the lobster drizzling it with the butter from the pan.

  • Carefully place a poached egg on top of each toast.

  • Garnish with chopped chives, red pepper flakes, microgreens, or any other toppings of your choice.

Serve the Lobster Avocado Toast with Poached Egg immediately while still warm. Sprinkle with additional salt and pepper if desired and enjoy this delicious and indulgent breakfast or brunch dish!

Lobster Health Benefits

Lobster, like many other types of seafood, offers a range of health benefits due to its nutrient content. Here are some of the potential health benefits of incorporating lobster into your diet:

  1. Rich in Protein: Lobster is an excellent source of high-quality protein, which is essential for building and repairing tissues, muscles, and organs in the body.

  2. Low in Fat: Lobster is relatively low in fat, particularly saturated fat, making it a lean protein option that can contribute to a heart-healthy diet when consumed in moderation.

  3. Source of Omega-3 Fatty Acids: Lobster contains omega-3 fatty acids, which are beneficial for heart health. These essential fatty acids have been associated with reducing inflammation, lowering blood pressure, and improving overall cardiovascular health.

  4. Rich in Vitamins and Minerals: Lobster is a good source of several vitamins and minerals, including vitamin B12, vitamin E, zinc, selenium, and copper. These nutrients play important roles in various bodily functions, such as immune function, nerve health, and antioxidant protection.

  5. Low in Calories: Despite its rich taste and texture, lobster is relatively low in calories compared to other protein sources, making it a satisfying option for those looking to manage their calorie intake or maintain a healthy weight.

  6. May Support Brain Health: The omega-3 fatty acids found in lobster have been linked to improved cognitive function and may help support brain health and reduce the risk of cognitive decline as we age.

  7. May Promote Healthy Skin: Lobster contains nutrients like vitamin E and zinc, which are important for maintaining healthy skin. These nutrients can help protect against oxidative damage, promote skin repair, and support overall skin health.

It's important to note that while lobster can be a nutritious addition to a balanced diet, it is also high in cholesterol, so individuals with high cholesterol levels or heart conditions should consume it in moderation. Additionally, the health benefits of lobster are best realized when it is prepared in a healthy manner, such as steaming, boiling, or grilling, rather than deep-frying or smothering it in butter or heavy sauces.
